I am sure for some people the best way to cook chicken in summer is with a barbecue grill. That is a good way to cook chicken. If you love to grill, it might be your preference.
As for me, the best way to cook chicken or pork roast or anything like that in the summer is to use a slow cooker. You get a nice juicy piece of meat without generating any heat in your kitchen. A slow cooker uses about as much energy as your average light bulb, so you can cook away without it making your entire kitchen unbearably hot.
Lately I have been using this recipe to make a rotisserie style chicken. It calls for broiling at the end: you can do that but it’s not essential. If you put some peeled carrots under the chicken (instead of foil as the recipe calls for) you will also get a nice sauce at the end. It’s practically like going to Swiss Chalet! 😊
Slow cookers are great all year round. Don’t sleep on them in the summer. Your grill can use a break occasionally anyway.
